Makes 2 loaves

4 cups all purpose flour
2 cups whole wheat flour
2 tablespoons active dry yeast
2 tablespoons brown sugar
1 tablespoon salt
2 cups hot water (120 F)

Mix the 2 cups of hot water with the yeast and brown sugar. Let stand about 5 minutes.

Mix 3 cups of all purpose flour with the and salt and add the yeast water. Beat about 100 strokes or 2 to 3 minutes with a mixer.

Stir in the remaining flour until the dough is not sticky. knead the dough for 8 minutes by hand or 2 to 3 minutes with a dough hook.

In a warm place, place dough in a bowl and cover. Let rise for 15 minutes. (Placing a warm damp cloth over it and a hot pan of water under it in an oven works very well.

Punch down dough and place in bread pan.

Place baking sheet with loaves in middle rack of cold over and place a cake pan filled with hot water under it. Set the oven to 400 F and bake for 40 to 45 minutes until golden brown. Brush with butter when finished baking. Allow bread to cool for at least 15 minutes before cutting.
