Tom & Michelle's Basic Salsa
3 Quarts Diced Tomato
2 Large Onions
4 Green Peppers
2 Jalapeno Peppers (remove seeds)
1 Tbsp Black Pepper
1 Tbsp Salt
1 to 2 cups Chopped Cilantro
Mix all ingredients except the cilantro in a 4 quart pan. Bring to boil then reduce heat and simmer for about 1 hour. Remove from heat and stir in the cilantro. Cool for 15 minutes before serving. Yields about 4 quarts. This recipe stays fresh in the freezer for about 1 year.
To make hotter salsa do not remove the jalapeno seeds. Hotter peppers and or Cayenne pepper can also be added.
For thicker salsa, about a tablespoon of cornstarch can be added.
