Vanilla Ice Cream
This is a very simple recipe.
Whole milk can be used instead of the 2% and heavy cream but the ice cream won't be quite as creamy.
2 cups 2% milk or whole milk
2 cups heavy cream or whole milk
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
In a bowl stir together the ingredients. Pour into the ice cream maker and freeze according to the ice cream maker instructions. Mix in the ice cream maker for about 30 to 40 minutes or until ice cream has thickened. Scoop ice cream into containers and allow to harden for at least 2 hours.

Mint Chocolate Chip Ice Cream
This is a variation of the vanilla recipe.
Whole milk can be used instead of the 2% and heavy cream but the ice cream won't be quite as creamy.
2 cups 2% milk or whole milk
2 cups heavy cream or whole milk
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
(FOR MINT CHOCOLATE CHIP)
1 teaspoon peppermint extract
3 drops green food color
1 cup miniature semisweet chocolate chips.
In a bowl stir together the ingredients except for the chocolate chips. Pour into the ice cream maker and freeze according to the ice cream maker instructions. Mix for about 10 minutes and add the chocolate chips. Mix in the ice cream maker for about 30 to 40 additional minutes or until ice cream has thickened. Scoop ice cream into containers and allow to harden for at least 2 hours.
