Makes enough noodles for 4 quart of soup.
1 cup whole wheat flour
1 1/2 cups all-purpose flour
1/4 teaspoon salt
3 large eggs
1 tablespoon cold water.
Mix all ingredients until dough forms. Knead for about 10 minutes until the dough is shiny and elastic but not sticky. Let dough rest for 15 to 20 minutes. Roll the dough and cut into noodles.
The noodles can be use immediately or frozen for later use. If freezing place layers of noodles in wax paper and dust with flour.
Use in any noodle recipe.
